Scrumptious Saturday: Red & Green Quiche

I kid you not, but I am the type of person who could eat eggs for every meal. They are just so versatile and can just do so much for a meal. They are protein packed, and cheap, so they are a go to protein source in my household. That being said, I buy a lot of eggs because we go through a lot of them. When I need to use up a few of them, my favorite thing to make is a quiche.


This week, I made a red & green quiche (named so from the veggies I chose to use). My herb garden is exploding right now, so I have a ton of fresh chives, and I also had a red bell pepper in the fridge that was ready to be used up. One awesome thing about this recipe is you can add what ever other veggies you have on hand, and it always turns out delicious and healthy! Plus, it is so easy to make! Here is my recipe:


Ingredients:

4 eggs

1/2 cup milk

1/3 cup shredded cheddar cheese

1 red bell pepper, chopped

1 bunch chives, chopped (about 2-3 TBSP worth)

1 frozen pie crust

Salt and pepper to taste


Instructions:

1. Preheat oven to 350 degrees F.

2. Add the shredded cheese to the bottom of a pie crust. I recommend setting the pie pan on a larger baking sheet so it is easier to pick up once it's filled.

3. In a bowl, whisk eggs, milk, salt, and pepper together, then stir in bell pepper and chives.

4. Pour the egg mixture over the cheese in the pie crust, then place in the oven.

5. Bake for 40-50 minutes, or until the center of the quiche is set and cooked through.

Isn't this a beautiful quiche? Enjoy fresh out of the oven! This makes great leftovers too, just store in the fridge in an air tight container!
