S'mores Chocolate Chip Cookies!

So I, like many out there, try to live a healthy lifestyle. I workout, I eat well, I drink lots of water, but sometimes, I crave a sweet treat. Last night, I was in a BIG mood for chocolate chip cookies. As I gathered ingredients to make them, I realized that I didn't quite have all of the ingredients to make my favorite chocolate chip cookie recipe. Dismayed, I opened the last cupboard that I hadn't searched yet, and saw a bag of mini marshmallows. A light bulb switched on in my brain, and the S'mores Chocolate Chip Cookies was born!

As I was making this recipe, all I could think about was how relaxing making s'mores by a campfire is, and I hoped that I could replicate that feeling of comfort just a little in the form of a cookie. When the first batch came out of the oven, Ethan snatched one up and gobbled it down, and I can say with confidence these receive his "gold star of approval"! Ingredients:

1 cup butter, softened

1 cup white sugar

1 cup light brown sugar, packed

2 tsp vanilla

2 large eggs

3 cups all-purpose flour (or if you can't find this in the store right now, I actually used bread flour because that was all the I had!)

1 tsp baking soda

1/2 tsp baking powder

1 tsp sea salt (or leave this out if you used salted butter)

1 cup semi-sweet chocolate chips

1 cup mini marshmallows


Baking Instructions:

1. Preheat the oven to 375 degrees F. Line a baking pan with parchment paper and set it aside.

2. Mix flour, baking soda, baking powder, and salt until combined. Set aside.

3. Cream the butter and white and brown sugars together until smooth. (you can use an electric mixer, but I prefer to mix by hand so either works!)

4. Beat in the eggs and vanilla until everything is smooth and combined.

5. Add in the dry ingredients and mix until combined.

6. Mix in the chocolate chips and mini marshmallows until they are evenly dispersed throughout the batter.

7. Scoop out 2-3 TBSP worth of batter onto the pan, trying to get even amounts of chocolate chips and marshmallows in each cookie. I got 6 dough balls on my pan, but if you make them smaller, you may fit more, depending on the size of your cookie sheet!

8. Bake for 10-12 minutes, or until the edges of the cookie turn golden brown.

9. Let the cookies rest on the pan for 1-2 minutes, then transfer to a cooling rack until they are set. Its super easy to just slide the parchment paper off of the pan, and that way, the paper helps stop the cookie from falling through the rack.

**This recipe made 24 cookies for me. I made my cookies a little larger in size, so you may get more if you make them smaller.
